Food || Gluten-Free Oatmeal Chocolate Chip Cloud Cookies

This recipe is extra special because it is my friend's grandmother's recipe. I was lucky enough that she would let me share it with you. They are gluten-free (they use no flour) and since they use egg whites they really taste like oatmeal clouds. They are light and sweet and good for you. My daughter and husband love them and are all kind of obsessed with them. These will be joining my regular repertoire since they are so delicious and easy to make.
Oatmeal Chocolate Chip Cookies
Ingredients ||
4 cups oatmeal (Quick one-minute oats are best)
2 cups brown sugar
1 cup vegetable oil
4 egg whites
1/2 tsp salt
1 tsp almond extract
1 cup bitter sweet chocolate chips (or more!!!)
Directions ||
Pre-heat oven to 300º. Beat the egg whites until stiff peaks form. Set aside. In a separate bowl mix oil and sugar together. Then add the oatmeal until all is well combined. Then fold-in gently the egg whites. Add the rest of the ingredients (salt, almond extract and chocolate chips) mixing gently. Place parchment paper on the baking trays and bake for 20 to 25 minutes or until slightly golden.

Your friend's grandmother must have been ahead of the gluten-free curve! My daughter is gluten intolerant and these look like one we might have to try.
