Food || Yogurt Olive Oil Cake ( a family recipe)

This little simple treasure of a recipe is generations old from my husband's family from the South of Spain.  It is simple and healthy, if you believe in all the benefits of olive oil.  My husband comes from good genes (they live well into their 90s and some even to their 100s and then some) but I also think this longevity has to do with their lifestyle and eating habits. Olive oil and yogurt is a huge part of their diet.  This recipe is so easy and tastes like a piece of country day (aka...delicious in a simple and comforting way).




Yogurt Olive Oil Cake

Ingredients ||

3 eggs
2 cups of sugar
1 cup of olive oil
1 cup of yogurt (I used Greek and it was perfect)
3 cups of flour
2 teaspoons of baking powder
The zest of one lemon
A sprinking of Turbinado Sugar

Directions

Preheat oven to 350 F. Beat the three eggs in the blender with paddle attachment until thick and smooth. Add the two cups of sugar. Mix well.  Then add the olive oil. Mix well. Add the yogurt. Mix well.  And little by little add the flour.  Add the lemon zest and mix until well blended.  Pour the batter into a 9 inch round springform pan.  Sprinkle the top with some turbinado sugar. Place in the oven for approximately 45-50 minutes.  Let cool and enjoy!!


You may think 1 cup of olive oil??  Trust me...you will get a slight hint of the olive taste but it is not oily at all.  And remember people in the Mediterranean live the longest and olive oil is a huge part of their diet.   1. Oh delicious and boy do I believe in the benefits of olive oil. I use it everyday more than once, plus it is so good. Greek and Spanish olive oils are actually my favorite!
