Food || Yummiest Chocolate Chip Banana Bread

I just love banana bread.  It is a healthy treat to have on hand because it is perfect for hungry kids and it puts over ripe bananas to good use.  Nothing goes to waste in this house! And its so easy that it is the ideal recipe to make with the kiddos. I love adding quality chocolate chips to it and making it in these mini bundt cake shapes ( I use a pan similar to this one) so I can easily freeze a few for later use (they defrost really quickly and perfectly).  This small bundt cake size is really quite practical.



Banana Bread with Chocolate Chips

Ingredients
3 large ripe bananas
1 egg (well beaten)
1 cup of sugar
3 tbsps of butter (melted)
2 cups of flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 cup of bittersweet chocolate chips

Directions
Mash bananas well and mix with the beaten egg.  Add sugar and mix thoroughly.  Add the melted butter to the banana mixture.  Sift together the remaining dry ingredients and add to the banana mixture.  Mix in chocolate chips. Bake in a greased 5x9 inch pan ( 2 lb. loaf pan) or two smaller loaf pans (or in the mini bundt cake pans that I have which is similar to this one).  Bake at 350 for 1 hr.  If using smaller pans bake for 40 min.

This bread is moist and light at the same time.  Not heavy at all like some banana breads I have tried.  How do you put your over ripe bananas to good use?

  3. This looks fabulous, I just adore banana bread - really like zucchini bread too! I usually freeze my overripe bananas and use them in smoothies or to make banana pancakes.
