Food || Quinoa Cookies

Baking is such a normal part of life around here that I usually forget to blog about it because it's just what we do. If we want sweets, we make them. And most of the time things are eaten and enjoyed before they have even cooled from the oven. This definitely means there is no time for food styling or photograph taking.  A good friend of mine came to lunch the other day and for dessert I offered her one of these cookies.  She pointed out that she had not seen them on the blog and that she wanted the recipe.  So here it is for you all enjoy.


My mom found the recipe.  She has quite the eye for knowing which ones will work.

Quinoa Cookies (wheat-free)

Ingredients ||

1/2 cup honey
1/3 cup brown sugar
1/2 cup (one stick) butter
1/2 peanut butter
1/2 tsp vanilla
1 cup rice-flour
3/4 cup quinoa flakes
1 tsp baking soda
1/4 tsp salt

Heat oven to 350 degrees. Beat honey, brown sugar, butter, peanut butter, and vanilla in a bowl until creamy. Combine the rice flour, quinoa flakes, baking soda and salt in a smaller bowl. Add to the mixture and beat until well blended. Drop rounded teaspoonfulls about 2 inches apart onto an ungreased cookie sheet. Bake for 12 to 15 minutes or until light golden brown. Cool for one minute before removing from the cookie sheet.  Yields about 3 dozen.

Not sure what the difference is between gluten free and wheat free.  All I know is that you can be on a wheat free diet and still have gluten, but if you are on a gluten free diet then you have to be wheat-free as well....Anyhoo... these cookies are delicious and healthy. I'm thinking it could be fun to add some chocolate chips to this recipe?  Do you all love baking as well??  I need to test out some pumpkin recipes for you.   3. Yummy yum yum! I am SO taking this recipe. We also bake quite a bit and I have never heard of quinoa cookies, so I have to try them. Thank you for the recipe and the extra five pounds! ;)
