Food || Olive Oil, Chocolate, Chocolate Chip Cookies

We are all obsessed with olive oil around here. It must be because my husband is from the Mediterranean and grew up playing in the family's olive groves.  They are all so well versed and passionate about anything olive oil.  We take our olive oil very seriously around here. We cook everything with it (you may remember this family recipe for an olive oil and yogurt cake or this olive oil lemon meyer cake we make often as well).  Plus, olive oil's health benefits are no secret.  Everyone is my husband's family lives till 98 at least!  So, this time around when I saw a recipe for chocolate, chocolate chip olive oil cookies I just had to try it.  The cookies are AMAZING! Very rich and decadent with a fudgy-brownie consistency.  I highly, recommend this recipe.  Plus, they might add years to your life, so why not give them a try?  They might become your delicious secret weapon to keeping young.




Olive Oil Chocolate Chocolate Chip Cookies

Ingredients

1/2 cup olive oil
1 cup sugar
2 eggs
3/4 cup flour
3/4 cup natural cocoa powder
1/2 tsp salt (plus more for sprinkling. I use coarse sea salt or the black salt)
1 tsp baking soda
1 tbsp hot water
1 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips

Directions

Preheat oven to 350 F.  Line baking sheets with parchment paper.  With a mixer fitted with the paddle attachment mix the olive oil and sugar. Mix well until combined. Add the eggs, one at a time. Mix well.  Add the cocoa powder, flour and salt. Mix until a dough forms that looks like thick brownie batter.

In a separate small bowl, dissolve the baking soda in the hot water. Add this dissolved baking soda into the bowl with the dough. Then add the vanilla extract as well. Mix everything until well combined.

Stir in the chocolate chips with a spatula. Refrigerate the batter for at least 30 minutes or even overnight.

With a table spoon scoop out the dough and place in the parchment lined baking sheets.  Sprinkle with sea salt before putting in the oven.  Bake for ten minutes, or until the edges are set.  Let cool completely on the baking sheets and then transfer to a wire rack to cool.
